Casteller DOC
Trentino's easy red, named after a hill above Trento, a Merlot-led blend with Schiava, Enantio, Teroldego and Lagrein. It's light to medium ruby, with sour cherry, red plum, a little herb and soft tannin, made to drink young and slightly cool with polenta or canederli. Volumes have collapsed as producers prefer the Trentino DOC varietal labels, so it's mostly a cooperative wine now. Cavit and Cantina di Toblino are among the few who still bottle it.
