Cesanese di Olevano Romano (Olevano Romano) DOC
The middle Cesanese appellation, and thanks to Damiano Ciolli the one most likely to reach an American glass. Olevano's volcanic and clay soils give a Cesanese with more flesh than Affile and more perfume than Piglio: crushed raspberry, sour cherry, black pepper, dried rose and violet, with juicy acid and fine, slightly chalky tannin. Ciolli's Silene, aged in concrete and old wood, is the reference; Cirsium, from a single old vine parcel, is the serious one.
