Colli della Sabina DOC

A DOC for the olive oil hills of Sabina, where vines are an afterthought. The rules allow Trebbiano and Malvasia whites and Sangiovese and Montepulciano reds, and the few bottles made are light and simple: cherry and dried herbs in the reds, pear and almond in the whites, both with low acid. Very little is bottled under the name; most growers sell grapes or use Lazio IGT.
