Colli di Parma DOC

The wine of prosciutto and Parmigiano country. Malvasia di Candia Aromatica is the star: intensely floral and grapey, with orange blossom, sage, ripe apricot and a dry, slightly bitter finish, often bottled frizzante to cut the salt and fat of the local food. Rosso is a Barbera-Bonarda blend in the Piacenza mold, dark, tart and sometimes fizzy. Small estates like Lamoretti and Monte delle Vigne make serious still versions.
